I Need a Little Christmas with Finals Starting this Week!


Finals for law students start this week (one week earlier than undergrads) so I've been feeling that I need a little Christmas to buoy me up! It's a good thing there's a song for that! Check out "We Need a Little Christmas" sung by Angela Lansbury.

A recipe for sausage pizza may not inspire Christmas songs, but pizza is a staple during finals weeks!


SAUSAGE PIZZA

½ cup warm water                                      
¾ teaspoon yeast                                       
1 teaspoon sugar, divided                        
1 ½ tablespoons olive oil, divided           
½ teaspoon salt                  
1 ½ cups all-purpose flour           
½-¾ cup pasta sauce
¼ cup heavy cream
2 cups sausage, cooked and crumbled
½ cup onion, chopped
½ cup red pepper, chopped
1 roma tomato, diced
½ pound mozzarella cheese, grated
  1. Preheat oven to 475 degrees.
  2. Combine warm water, yeast, and ½ teaspoon sugar in a bowl and set aside.
  3. Put ½ tablespoon olive oil, salt, ½ teaspoon sugar in a large bowl. Stir then push the mixture to the side. Put the flour on the side opposite of the bowl from the salt mixture. Pour the yeast mixture in the bowl and combine all ingredients by stirring with a large spoon.
  4. Knead the dough to make it consistent—just for a minute. Set aside for 15 minutes to rise.
  5. Measure out into small, separate bowls the pasta sauce, heavy cream, sausage, onion, red pepper, tomato and mozzarella cheese.
  6. Put ½ tablespoon olive oil in a jelly roll pan and spread around with your fingers. 
  7. Put pizza dough onto a floured surface. Roll into a large rectangle 12 inches by 24 inches.
  8. Lay rolled dough on oil in the jelly roll pan.
  9. Quickly spread ½ teaspoon olive oil with your fingers over the dough.
  10. Spread pasta sauce over the dough to the edges. Drizzle heavy cream over pasta sauce. Mix slightly with the back of a spoon.
  11. Put sausage, onion, red pepper, tomato on the sauce mixture. Gently lay the grated mozzarella cheese over the pizza.
  12. Bake for 3 minutes on the lowest shelf of the oven. Then move the pan to the middle shelf and bake for 12-14 minutes more or until done.
