Healthy Sandwich: Early Autumn


Sandwiches are really very easy to make and much healthier than some other lunch meals.  Especially in autumn, soup and sandwiches go together great!  But it was warm today so I just had the sandwich.

A FRESH SANDWICH THE CHASTON WAY

Hard roll (crunchy on the outside and soft on the inside)
Cheddar cheese
Onion
Red pepper
Fresh spinach
Black ground pepper
Thinly sliced chicken breast (deli style)
  1. Slice the bun in half to make a top and bottom for the sandwich.
  2. Thinly slice the cheese.  Place cheese on both halves to cover each inside.
  3. Layer the chicken one piece at a time onto each half.
  4. Slice slivers of onion and red pepper onto each half.  Lay fresh spinach over the top half.  Put thin slices of cheese on the spinach.  Sprinkle with black pepper.
  5. Gently close the sandwich together and cut in half.
  6. You can put a little Italian dressing or Caesar dressing in a dipping bowl or on the side of your plate to dunk before each delicious bite.  Or you can eat it plain!
