Foil Dinners: The Lady is a Tramp

In our family we always called foil dinners "hobo dinners."  We used to only make them while camping, but now we don't camp as much, so we make them in the self-standing fire pit on the back patio!

When I think of "hobo" I think of the opening verse of "The Lady is a Tramp" sung by Ella Fitzgerald. You just can't go wrong with Ella who sings about doing things exactly as she does without anyone telling her she can't!

FOIL DINNERS IN THE FIRE PIT
Makes about 6 foil dinners.

2 tablespoons of butter per foil dinner
1 pound ground sirloin, cooked
1 pound hot Italian sausage, cooked
1 onion, chopped
1 red pepper, chopped
1/4 cup celery, chopped
1 1/2 cups baby carrots
4 large potatoes, cooked and cubed
2 sweet potatoes, cooked and cubed
1 small zucchini, optional
1 small yellow squash, optional

  1. Rip a 2' x 2' foil sheet.  Place a pat of butter on the foil.  Put in whatever fixings you want in your dinner.
  2. Pull two ends together and fold edges over each other until close to the food.  Fold under the other ends.  Rip another 2' x 2' foil sheet.  Put the dinner upside down and fold, as before, the new piece of foil so that it looks like a package.
  3. Put on coals for 8 to 10 minutes.  Remove with long-handled tongs and allow to cool a little bit before opening.
