Cabbage is a great alternative to iceberg lettuce. I like the crunch of cabbage. But it can sometimes be a challenge to pair cabbage with the right kinds of flavors. The salad below is a simple yet tasty way to dress up a head of cabbage.
This recipe only uses a wedge from the head of cabbage, so I felt "Goin' Out of My Head" performed by jazz guitarist Wes Montgomery would be another perfect pairing!
CABBAGE WEDGE SALAD
¼ head of cabbage
1 cup dried cranberries
1 cup raw cashews
¼ cup sesame seeds
¼ cup rice vinegar
- Peel off outer leaves of cabbage, cut in half then into quarters. Cut the core out.
- Cut quarter into four wedges. Set on individual plates. Top each plate with ¼ cup cranberries and cashews, and 1 tablespoon sesame seeds.
- Just before serving, drizzle each plate with 1 tablespoon of rice vinegar.
- In a sealable plastic bag, save the remaining ¾ head of cabbage for future salads ready to be made or for other recipes.
