Cabbage Wedge Salad


Cabbage is a great alternative to iceberg lettuce.  I like the crunch of cabbage.  But it can sometimes be a challenge to pair cabbage with the right kinds of flavors.  The salad below is a simple yet tasty way to dress up a head of cabbage.


This recipe only uses a wedge from the head of cabbage, so I felt "Goin' Out of My Head" performed by jazz guitarist Wes Montgomery would be another perfect pairing!

CABBAGE WEDGE SALAD

¼ head of cabbage
1 cup dried cranberries
1 cup raw cashews
¼ cup sesame seeds
¼ cup rice vinegar

  1. Peel off outer leaves of cabbage, cut in half then into quarters.  Cut the core out. 
  2. Cut quarter into four wedges.  Set on individual plates.  Top each plate with ¼ cup cranberries and cashews, and 1 tablespoon sesame seeds. 
  3. Just before serving, drizzle each plate with 1 tablespoon of rice vinegar.
  4. In a sealable plastic bag, save the remaining ¾ head of cabbage for future salads ready to be made or for other recipes.
